PROCESSING
With
experienced buyers on every Scottish Fish Market - Fresh,
Top Quality Fish is bought and delivered daily to our factory in
temperature controlled vehicles to be processed quickly ensuring
absolute freshness.
FILLETING
We
employ professional fish filleters who have the ability to process the
fish by hand ensuring traditional top quality fillets and combine this
with modern fast and hygienic processing machinery.
The
fish is then graded, packed and iced before returning to the chills ready
for despatch,
MONKFISH
We
employ professional monkfish cutters whose skills and respect for
quality ensure that this high value product reaches our customers in first
class condition. The tails are then graded, packed and iced to customers'
specifications.
SMOKED
FISH DEPARTMENT
Andrew
Christie Junior has a long established reputation for its cured fish to
the Export Market. Now occupying the entire second floor of
our factory the range of kilns and production area enables us to produce
natural smoked or annatto coloured smoked fillets.
Small
starter orders are available.
FROZEN
FISH
We
have our own coldstore and freezing facilities and can supply a wide range
of our products frozen in pallet quantities to UK and Europe and
container loads worldwide.
